Los principios fundamentales del sistema de
refrigeración que rigen la funcionalidad de un
refrigerador o enfriador frente a un sistema típico de
aire acondicionado son la misma. Dentro del reino de aire
acondicionado, las diferencias entre los diferentes tipos de
sistema de aire acondicionado se basan en su aplicación y
el tamaño. En los grandes sistemas de aire acondicionado,
como las relativas a las aplicaciones industriales y comerciales,
los principales componentes de los sistemas de
refrigeración son considerables, tanto independiente, y se
encuentran por separado. Algunos de los grandes sistemas
industriales y de aire acondicionado constan de grandes
refrigeradores de una sola unidad. Un enfriador típico
para aplicaciones de aire acondicionado está clasificado
entre los 15 a 1500 toneladas. Esto se traduciría en
180.000 a 18 millones de Btu/h ó 53 a 5.300 kW de
capacidad de enfriamiento. Temperaturas del agua refrigerada en
tales sistemas pueden variar desde 35°F a 45°F o 1,5
°C a 7°C, dependiendo de los requisitos de
aplicación específicos. La gran refrigerador tiene
más de 700 hp de fuerza, mientras que el pequeño
compresor se miden, aproximadamente 1.3 hp.
Grandes sistemas de aire acondicionado basados ??en
enfriadoras y de procesos de refrigeración utilizan agua
como fluido de trabajo "secundaria". Pero, el fluido de trabajo
principal sigue siendo un refrigerante típico, es decir ,
el HFC-134a, amoniaco, R-500, etc grandes sistemas sw3 aire
acondicionado a base de enfriadores se pueden categorizar como
sistemas abiertos o Sistemas de Aire Acondicionado cerrados. Un
sistema de aire acondicionado abierto utiliza un refrigerante
freón basada, en un gran enfriador, para enfriar el agua a
35 °F a 45 °F o 1,5°C a 7°C gama. Esta agua
refrigerada se transporta luego a Abra Limpiadores de Aire,
equipadas con boquillas de pulverización de agua
refrigerada. La vuelta o el aire exterior pasa a través
del agua fría de pulverización (Rauf, S. B.
2012).
El alto contenido de humedad y un mayor retorno de
templado o del aire exterior es enfriada de este modo y
deshumidificado a medida que pasa a través de la arandela
de aire. El suministro de aire que sale de la lavadora de aire es
inferior al bulbo seco y más bajo punto de
condensación, con una humedad relativa inferior. El aire
de alimentación es accionado entonces por el ventilador de
suministro de aire a los espacios de trabajo, o espacios ocupados
en general, como el aire acondicionado. Un sistema de aire
acondicionado cerrada, por el contrario, en la mayoría de
los casos, no utiliza agua enfriada como un fluido de trabajo
secundario para enfriar y acondicionar el aire ambiente. Sistemas
de aire acondicionado cerrados son similares o equivalentes a los
sistemas residenciales de aire acondicionado que se aplique una o
freón refrigerante como fluido de trabajo.
1.1. Compresores del sistema de
refrigeración
Hay cinco tipos principales de compresores de aire
acondicionado:
1 . compresor rotativo
2 . compresor alternativo
3 . compresor centrífugo
4 . Los compresores de tornillo
5 . compresor voluta
Mientras que la función y la salida final de
estos diferentes tipos de compresores es el vapor de los
componentes del mismo de refrigerante de alta presión
mecánica y principios empleados para llevar a cabo la
compresión difieren. Estos enfoques y principios
mecánicos diferentes son evidentes a partir de los nombres
de los compresores mencionados anteriormente. El compresor
más común es el compresor de movimiento
alternativo.
Estos compresores pueden ser de tipo abierto o tipo
sellado herméticamente. Un compresor típico
refrigerador está sellado herméticamente.
Compresores de refrigeración comunes varían en
tamaños desde menos de 9 kW (aprox. 9 CV) a 1 MW (aprox.
1.000 CV), con temperaturas de condensación que van desde
15°C a 60°C, o superior.
1.2. Sistema de Refrigeración del
condensador
Condensadores, en esencia, son los dispositivos de
transferencia de calor. Permiten la extracción de calor de
la forma, de alta presión, el vapor refrigerante caliente.
Por lo tanto, lo que permite que el vapor se condense en fase
líquida de alta presión. Mientras que la
función de todos los condensadores es la misma, la cual es
condensar alta temperatura, alta presión y el vapor de
refrigerante de alta entalpía, como los compresores y
enfriadores, se diferencian en función de su tamaño
y aplicaciones específicas. Por ejemplo, muchos sistemas
de aire acondicionado de tipo abierto lavadora de aire grandes
son grandes, a base de agua, torres de enfriamiento para enfriar
la alta presión y alta entalpía, el vapor de
refrigerante. Por otro lado, algunos grandes sistemas de aire
acondicionado cerrados emplean con aire forzado, torres de
enfriamiento en seco.
1.3. Refrigerantes
Un refrigerante es una sustancia o medio utilizado en un
ciclo de calor del sistema de refrigeración. Refrigerantes
permiten el intercambio de calor y el trabajo a realizar en los
sistemas de refrigeración que sean sometidos a cambios de
fase repetitivas y cíclicas de líquido a vapor y el
vapor a líquido.
Tradicionalmente, fluorocarbonos (FC) y los
clorofluorocarbonos (CFC) se han utilizado como refrigerantes.
Sin embargo, están siendo eliminadas a causa de su ODP, el
agotamiento del ozono Potencial y, algunos casos, GWP, Global
Warming Potential. Ellos están siendo reemplazados por
hidrofluorocarbonos, es decir, el HFC-134a. Otros refrigerantes
sin CFC, y no HFC utilizados en diversas aplicaciones son los
hidrocarburos no halogenados tales como metano y no
hidrocarbonados sustancias tales como amoníaco,
dióxido de azufre.
ODP (ozone depletion potential) o potencial de
agotamiento de ozono de un refrigerante, o cualquier otra
sustancia, se define como la capacidad de una sola
molécula de que el refrigerante para destruir la capa de
ozono. Todos los refrigerantes R11 utilizan como una referencia
de datos, con ODP referencia R11 de 1,0. Cuanto menor sea el
valor de la ODP, la menos perjudicial que el refrigerante
es a la capa de ozono y el medio ambiente.
GWP (global warming potential) significa potencial de
calentamiento global. GWP es una medición basada en un
período de 100 años. Se cuantifica el efecto
refrigerante tendrá sobre el calentamiento global en
relación con el potencial de calentamiento
atmosférico de dióxido de carbono, CO2.
El dióxido de carbono se le asigna un GWP de 1.
El PCA de todas las demás sustancias o productos
químicos se evalúa con respecto al dióxido
de carbono GWP de 1. Cuanto menor sea el valor de GWP, el mejor
el refrigerante es para el medio ambiente. Actualmente no existen
restricciones sobre el uso de R134A, R407C, R410A y R417A en
equipo original o para el mantenimiento y la reparación de
la válvula de expansión. La válvula de
expansión es un aparato o componente utilizado en sistemas
de refrigeración para estrangular el refrigerante de alta
presión, en fase líquida, de un estado
líquido a alta presión a baja presión estado
líquido.
La capacidad de un sistema de refrigeración es
esencialmente la capacidad del refrigerante para intercambiar
calor con el medio ambiente o aire ambiente. Mientras que en el
sentido absoluto, la capacidad de enfriamiento representa la
capacidad de un sistema de refrigeración para enfriar el
medio ambiente o entorno, en el caso de bombas de calor, la
capacidad de enfriamiento del sistema podría incluir
ampliamente la capacidad del sistema para calentar el medio
ambiente (Rauf, S. B. 2012).
Productos alimenticios perecederos pueden mantenerse
mucho más tiempo por la congelación siempre que se
cumplan dos condiciones:
a) El producto debe congelarse a una temperatura tan
baja como sea posible;
b) La mayor parte del líquido en el producto
deben ser convertidos en hielo. El segundo factor es
particularmente importante para los peces, ya que el fluido en
ella constituye un disolvente para muchas sustancias
orgánicas y minerales y favorece el crecimiento de
microorganismos y el desarrollo de reacciones
bioquímicas.
La congelación es un proceso por el cual la
temperatura del pescado crudo se reduce desde el nivel inicial a
entre -16 ºC y -18 ºC, y la mayor parte del
líquido dentro de ella convierte en hielo.
El punto eutéctico de los productos alimenticios,
que es la temperatura mínima a la que todo el
líquido en el que se convirtió en hielo, se -55
ºC a -65 ºC, pero una temperatura tan baja no puede
generalmente ser alcanzado en la industria de alimentos.
Transferencia de calor durante la congelación es
acompañado por la transferencia de masa. En consecuencia,
la congelación debe ser considerada como un proceso
complejo de calor y transferencia de masa.
Con eliminación de calor intensivos, cristales
pueden formar antes de que el líquido comienza a migrar
entre los tejidos, y el fluido se congela en su lugar natural, la
formación de pequeños cristales.
En los cálculos técnicos de procesos de
refrigeración para productos alimenticios, también
se hace uso de entalpía (contenido de calor), la
temperatura media del producto durante la congelación, y
la temperatura media final del proceso.
La entalpía de los peces varía de etapa en
etapa durante la refrigeración, el cambio más
pronunciado justo por debajo del punto de congelación, y
menos pronunciada a la temperatura más baja. La
entalpía se lee fuera de su valor a una temperatura dada,
y por lo general se toma como cero.
Independientemente de su tamaño o complejidad, un
sistema de refrigeración tiene una función
básica. Esa función es la de eliminar el calor de
un lugar o de la sustancia en las que no se quiere, y
transportarlo a un lugar donde pueda ser difundido en el aire o
el agua. Con el fin de seleccionar el equipo apropiado para una
aplicación dada, debe calcular cuidadosamente la cantidad
de calor que desea mover.
2. Objetivos
2.1. Objetivo generale
Este estudio tiene como
objetivo:
Determinar la Carga de calor total (capacidad de
refrigeración) durante el enfriamiento y
almacenamiento.
2.2. Objetivos
específicos
Encontrar la Carga de transmisión;
Encontrar la Carga del cambio de aire
de las aberturas de puertas;.Encontrar la carga de Enfriamiento del
produto;Encontrar la Calor de la respiración durante
el enfriamiento.
3. Materiales y Métodos
El estudio se llevó a cabo en el almacén
frigorífico "Pesinagri, AA". Para la
determinación de las cargas de la transferencia de calor
se midió longitudes, larguras y alturas de las paredes (20
x 5m), tierra (20 x 15m) y el techo (20 x 15m), haciendo una
superficie total de 700m2. El volumen interior (18,5 x 18,5 x 4,8
m) fue de 1643m3.
El material aislante construida en poliuretano cuyo
espesor fue de 7,6 cm y el coeficiente de conductividad (K) de
1,3. KJ/m2/cm2°C. La tasa de flujo de calor (U) a
través de las paredes fue de 1,1 KJ/m2/cm2
ºC.
Las condiciones ambientales en el interior fue de 30
°C y una Humedad Relativa de 50%. La temperatura inicial de
los peces fue de 21 °C y la temperatura de almacenamiento de
-1,1 °C.
500 cajas de plástico se utilizan con 30 kilos de
pescado cada una. La caja vacía medió 2.5 Kg. Se
colocaron en el espacio refrigerado un total de 15.000 Kg de
pescado y el peso total de cajas 1250 kg.
Se ubicó en el espacio refrigerado 200
cajas/día de pescado en el primero, segundo y tercero
día, un total de 6000 kg de pescado/día. La tasa de
reducción de la temperatura en la primera días
fueron de 21 y 4,2 ° C y 4,2 °C a -1,1ºC en el
segundo día.
Se observaron las pérdidas de carga de aire de 5
°C/día durante las aperturas de las puertas para el
Proceso de enfriamiento y 2 ºC/día durante el
almacenamiento. Los valores del calor específico de 0,86
para los peces y el 0,70 por caja de plástico se han
tenido en cuenta.
Fueron determinadas las carga térmicas para bajar
la temperatura de aire 30 ºC a -1,1 ºC (50 % de humedad
relativa) igual a 74.5 kJ/m3 y de 7,2 ºC a -1,1ºC a (70
% de humedad relativa) igual a 15.3 kJ/m3.
Fueron también consideradas otras cargas de calor
de las luces, 1800 W/h (3,6 kJ/W), Ventiladores en 3,112 kJ por
5HP, 2 Carretillas elevadoras eléctricas, 36.920 kJ cada
uno para 8 h. Los trabajadores(2), 1.000 kJ por h para cada
persona.
Para a determinación de las cargas operacionales
fueron utilizadas las seguintes formulas:

4. Resultados
La carga total de calor para ser manipulado en cualquier
aplicación es la suma del calor de cuatro fuentes. Para
una mayor precisión en la estimación de la carga de
la fuga de calor, de cada pared, el suelo y el techo por
separado, dio una superficie total de 700m2.
Carga durante el enfriamiento y el llenado de
almacenamiento: diferencia de temperatura (DT) de 30 ºC a
-1,1 º C = 31,1 º C, suponiendo 31,1 º C TD en
todas las superficies: kJ por 24 h (tabla1).
Calor máximo acumulado en almacenamiento antes de
completarse el enfriamiento: El peso total de pescado 15.000 kg
de peso – 2 días de carga de 12 000 kg = 6 000 kg (6
toneladas); tasa de respiración a – 1,1 ºC es 812 kJ
por tonelada y 24 h; tonelada de pescado (6) x tasa de
respiración (812) es igual a 4872 KJ.
Se añadió 10% al valor de la carga total
de enfriamiento lo que hace un total de refrigeración
requerida de 3.027.770 KJ.
Suponiendo que los equipos de refrigeración
funciona 18 h al día: 3.027.770 ÷ 18 h = 168.209 kJ
por h. Dado que una tonelada de refrigeración absorbe
12.660 kJ por 24 h: se requiere 168.209 ÷ 12,660 = 13,3
toneladas de capacidad de refrigeración
máxima.

Se añadió 10% al valor de la carga total
de almacenamiento lo que hace un total de refrigeración
requerida de 961206 KJ.
Suponiendo que los equipos de refrigeración
funciona 18 h al día: 961206÷ 18 h = 53400 kJ por
h. Dado que una tonelada de refrigeración absorbe 12.660
kJ por 24 h: se requiere 53400 ÷ 12,660 = 4,2 toneladas de
capacidad de refrigeración durante el almacenamiento
normal.
Conclusiones
Las leyes de la termodinámica son vistas como
leyes de "Energía de calentamiento." La temperatura es uno
de los principales parámetros de la termodinámica,
debe quedar claro que la temperatura no es una medida directa de
calor.
La ley de conservación de la energía
establece que la energía puede transformarse de una forma
a otra, pero no puede ser creada ni destruida.
En el dominio de la termodinámica, el trabajo
constituye el fenómeno de cambiar el nivel de
energía de un objeto o un sistema.
Las tres principales categorías de los sistemas
termodinámicos analizadas son basados ??en su
interacción con el entorno o medio ambiente.
En un sistema de refrigeración, el sistema
termodinámico cerrado incluy: pistones neumáticos
sellados y refrigerante.
El Proceso de estrangulación en un sistema de
refrigeración es un proceso adiabático,
isoentálpica que se produce en la válvula de
expansión; donde se permite un sistema de líquidos
de alta presión (refrigerante) para expandir a un
líquido bajo presión, sin absorción o
liberación de energía de calor. Y la etapa de
evaporación de un ciclo de refrigeración representa
un proceso isobárico en que la presión permanece
constante a medida que el sistema líquido de baja
presión se evapora o se cambia de fase de líquido a
gaseoso mediante la absorción de la energía de
calor del aire que pasa a través del intercambiador de
calor.
El calor máximo acumulado en almacenamiento antes
de completarse el enfriamiento es igual a 4872 KJ con la
capacidad de refrigeración máxima de 13,3
toneladas.
Un total de refrigeración requerida de 3.027.770
KJ para o enfriamiento y 961206 KJ para o almacenamiento. La
capacidad de refrigeración durante el almacenamiento
normal de 4,2 toneladas.
