Digestibilidad de nutrientes en
terneros alimentados con diferentes niveles de leche y
levadura torula (Candida utilis)
Resumen
Las pruebas de
balance de nutrientes son usadas ampliamente en las investigaciones
de nutrición
animal. Es obvio el gran significado de cómo los
nutrientes de los alimentos son
digeridos y retenidos en los tejidos del
cuerpo; debido a la importancia de conocer la eficiencia de
utilización de la levadura torula se concibió el
siguiente trabajo con
los siguientes objetivos:
– estudiar la utilización digestiva de los
nutrientes y la retención de
nitrógeno;
– estudiar el comportamiento ante una dieta dada, para evaluar
la calidad de la
dieta y el aprovechamiento de ésta por el animal de
acuerdo al nivel de consumo.
Animales, dieta y diseño.
Se emplearon 12 terneros machos Holsteins de 7 a 12 días
de edad con pesos similares. Las dietas empleadas fueron las
siguientes:

El peso metabólico final (kg.0.75), el consumo de
materia
seca(g./kg.0.75) y la digestibilidad aparente no fueron
diferentes entre los tratamientos. La digestibilidad de la MS. se
mantuvo por encima del 80% en las dietas estudiadas, la
digestibilidad del nitrógeno fue menor aunque no
difirió al sustituir 2 kg. de leche con 200g. de torula
con un 67.97%. La digestibilidad aparente de la fibra fue similar
en todos los tratamientos. La inclusión de cualquiera de
las combinaciones de leche y levadura torula antes mencionadas,
no redujeron la digestibilidad de los nutrientes ni la
retención de nitrógeno. Los resultados del presente
estudio con la levadura torula nos permiten afirmar que la misma
puede ser utilizada como una fuente proteica para suplementar o
sustituir el alimento lácteo durante la lactancia de
los terneros.

Summary
The tests of balance of nutrients are used thoroughly in
the investigations of animal nutrition. It is obvious the great
meaning of how the nutrients of the foods are digested and
retained in the tissue of the body; due to the importance of
knowing the efficiency of use of the yeast torula the following
work was conceived with the following objectives:
– to study the digestive use of the nutrients and the
nitrogen retention ;
– to study the behavior before a given diet, to evaluate
the quality of the diet and the use of this for the animal
according to the consumption level.
Animals, diet and design. 12 male calves Holsteins was
used from 7 to 12 days of age with similar pesos. The used diets
were the following ones:

The final metabolic weight (kg.0.75), the matter
consumption seca(g./kg.0.75) and the apparent digestibilidad was
not different among the treatments. The digestibilidad of the MS.
stayed above 80% in the studied diets, the digestibilidad of the
nitrogen went smaller although it didn't differ when substituting
2 kg. of milk with 200g. of torula with 67.97%. The apparent
digestibilidad of the fiber was similar in all the treatments.
The inclusion of anyone of the combinations of milk and yeast
torula before mentioned, they didn't reduce the digestibilidad of
the nutrients neither the nitrogen retention. The results of the
present study with the yeast torula allow us to affirm that the
same one can be used as a source proteica for suplementar or to
substitute the milky food during the nursing of the
calves.

Introducción y objetivos
Las pruebas de balance de nutrientes son usadas
ampliamente en las investigaciones de nutrición animal. Es
obvio el gran significado de cómo los nutrientes de los
alimentos son digeridos y retenidos en los tejidos del cuerpo
(Asplund, 1979).
En el mundo se han utilizado diferentes fuentes de
proteínas en los sistemas de
alimentación de los terneros pre-rumiantes, ya sea como
sustituto lechero o de manera conjunta con la leche, dentro de
éstas (levadura, soya, pescado, etc.). Sin embargo, la
digestibilidad aparente de nutrientes, la retención de
nitrógeno, el tiempo de
coagulación y la modificación de los constituyentes
durante el tránsito intestinal, lo cual provoca diarreas; son
los factores principales que limitan la utilización de
fuentes proteicas diferentes a la láctea.
Según Simón (1989) las levaduras pueden
ser utilizadas en la alimentación de los terneros, debido
al equilibrio de
nutrientes que ellas poseen, a su solubilidad y a la carencia de
sustancias indeseables (factor antitrípsico y minerales en
exceso). Debido a la importancia de conocer la eficiencia de
utilización de la levadura torula se concibió el
siguiente trabajo con los siguientes objetivos:
– estudiar la utilización digestiva de los
nutrientes y la retención de
nitrógeno;
– estudiar el comportamiento ante una dieta dada, para
evaluar la calidad de la dieta y el aprovechamiento de
ésta por el animal de acuerdo al nivel de
consumo.
